Fish and fennel stew
Perfect as a healthy comfort meal for Winter. I chose to use salmon for this dish but any fish, or shellfish would work well for a great high protein option.
Fennel has a subtle aniseed flavour and caramelises to add sweetness during the cooking process. Fennel is also a great source of nitrates known to reduce blood pressure and linked to improved endurance sports performance.
Add some toasted wholegrain sourdough on heavier training days, otherwise eat just as it is for an excellent dish to support body composition goals.
